Honestly, I don’t drink wine. This is because I get rashes and have a very bad headache the day after I drink wine. But, one thing is for sure though, I love the aroma it brings to the food that I cook. And when one is done cooking, you can sense a bit of a fruitty after taste after each bite. And I don’t get any rashes after I eat dishes with wine in them. So yeah, I guess I am just allergic to the alcohol content of wines. I have tried different kinds of wines for the dishes that I cook. And right now, what I have in our pantry is a semi-sweet white wine. I like this wine in making pasta sauces for it’s sweet. I don’t know if that conforms to the law of cooking for professional chefs but you know how Filipinos are… We like our pasta sauce to be a bit sweet. I also used this wine to cook my favorite dish… Beef Caldereta! I guess you can consider this wine as my wine of the month!
